the L’Atavique (meaning a return to ancient or ancestral practices) is approximately 65% Pinot Noir and 35% chardonnay, with 40-45% reserve wine from the 2 previous vintages. It is incredibly clean and bright, with great driving acid and a strong mineral backbone, allowing the fruit to really shine. This is perfect as an aperitif, but with enough complexity to be enjoyed throughout your meal with a variety of seafood or light meat dishes. Thoughtful, purposeful, sustainable, delicious.
