What strikes you first is how buttery the nose is! Those bay leaf and rosemary notes suggest they're using wild yeasts during fermentation, creating herbaceous complexity you won't find in mass-produced blancos. On the palate, there's this lovely tension between the earthy, mineral agave character and that subtle sweetness. The "mature fruit" they mention tastes like cooked pear to us, which happens when the piñas are perfectly ripe before harvest. This drinks more like a reposado without the wood - all the complexity comes from careful production rather than barrel aging.
