Our hand-crafted Coastal Cane Pure Single Rum is a true reflection of the Northern Rivers region, with a unique profile that showcases the influence of our local coastal climate and soil. It all begins with fresh first-press juice from sugar cane grown in the rich soil of the Wollumbin Caldera. It is fermented, rested, and then twice distilled in our traditional 1,250 litre copper pot still.
The new-make cane spirit is then aged in a curated selection of oak barrels; influenced during maturation by the warm summers and temperate winters of our coastal sub-tropical region. The result is an unmistakable Agricole-style rum that is smooth in character, full of body, and rich in flavour.
Nose:
On the nose, it’s rich and vibrant with notes of baking spices, vanilla, and a bit of characteristic fresh cane funk.
Palate:
On the palate, it immediately coats the mouth with a beautifully viscous and rich profile. Notes of its fresh cane juice origins balance with vanilla, honeysuckle, and Christmas pudding. The finish is long, smooth, and sweet; with the slightest hint of salinity. It is an easy and beautiful sipping rum, perfect for moments of reflection at the end of a great day…

That "cane funk" on the nose is what separates Agricole from industrial rum - it's grassy, vegetal, and utterly distinctive from using fresh cane juice instead of molasses. The coastal aging adds something special here - that hint of salinity on the finish is the sea air working its way into the barrels over time. On the palate, there's this beautiful richness that comes from twice distillation in copper pot stills, creating oils that give it real weight and texture. The Christmas pudding notes suggest those oak barrels are doing serious work - probably a mix of char levels creating layers of spice and dried fruit complexity that perfectly complements the cane's natural character.
