Emigdio Jarquín is a master mezcalero working in Miahuatlán, and his Espadín showcases exactly why terroir matters. The nose hits you with that distinctive earthen horno smoke, but underneath there's this minerality that comes from the clay soil the agave grows in. Classic Oaxacan intensity - vegetal and almost medicinal at first, then revealing layers of roasted pepper, wet limestone, and a hint of tropical fruit that suggests perfectly ripe agave. The finish is long and warming with a slight salinity that's characteristic of this region. This isn't 'Smooth' mezcal - it's authentic, uncompromising, and exactly what mezcal should taste like when it's made by someone who learned the craft from generations before them.
