The botanicals in our Barrel Aged Gin are from the Australian Dry and are sourced from all parts of Australia including: Blood lime from the McPherson Ranges, Aniseed Myrtle from Nambucca Valley, Old Man Saltbush from Inland Australia, Wattle seed from Outback Australia and Mt Pepper Berries from Tasmania.

Then, the magic happens and our Australian Dry gin is matured in Starward Whisky Barrels which have previously held Apera.

This is a gin with real depth. It carries all the dry, spiced character of the original Gindu - wattleseed, mountain pepper, aniseed myrtle - but wrapped in soft layers from time spent in ex-Apera whisky barrels. Expect warm oak, dried citrus, and a slightly saline edge from the native botanicals. Sip it slow, like a whisky, or use it in place of dark spirits where you want complexity without the weight.
