Clement Cello is our exploration of the classic Italian cello category—bright, citrus-forward, and perfectly balanced. Unlike traditional limoncello, which leans into sweetness, Clement Cello incorporates a crisp acidity, ensuring a refreshing, juicy finish that never becomes cloying.

At the heart of Clement Cello is premium fruit from South Australia's Riverland, known for its world-class citrus. To capture the full vibrancy of peak-season clementines, we macerate the fruit twice—first in our base spirit, then again post-distillation—extracting both essential oils and natural acidity for a layered depth of flavour.

Clement Cello isn’t just a name; it’s a tribute. Our original still was named "Clem" after the distiller’s great-uncle, Clem Hill—an Australian cricketing legend. Known for his fearless playing style and leadership on the field, Clem’s spirit lives on in every bottle, embodying the same boldness, character, and precision that define our craft.
